Honeybees extract this from a nectar that forms on the bark of New Zealand South Island black beech and that sparkles in the sunlight (hence "honey""dew"). Honeydew honey has a full aroma, is heady, almost pungent, and malty with a thick red amber color. It is prized for its medicinal qualities in Europe, Turkey, Australia, and the Pacific Islands.
